【Malting Process】Beer quality depends on numerous factors, and high-quality malt can be produced during the malting stage using reliable JUMO automation instruments. Storage: The JUMO grain probe consists of several Pt100 or Pt1000 sensors installed at specific intervals. A single probe simultaneously detects temperatures at different locations within the grain silo. Detected temperatures are transmitted safely and reliably to the monitoring system via an explosion-proof temperature transmitter. The JUMO variTRON automation system offers multiple advantages for barley and malt storage. All measured values are recorded by four- or eight-channel analog input modules, capturing up to 120 or 240 analog signals in total. These are displayed in the control room using JUMO smartWARE SCADA, providing a clear overview of all temperature readings and allowing immediate identification of any faulty registers in case of issues. System components include the JUMO variTRON 500, 32-channel input/output modules and the JUMO dTRANS T06 Ex. Steeping: During steeping, barley is periodically soaked and aerated to promote germination. Continuous oxygen supply enhances barley respiration, generating more CO2 and heat. These must be continuously vented; therefore, the steeping process temperature must be monitored and recorded, with real-time display available on-site when necessary. The JUMO variTRON 500 automation system accurately controls air and water supply volumes and records, controls, and displays data for the entire malting process based on production scale and requirements. Germination: Enzymes required for later brewing stages are produced during germination. Air introduced must maintain sufficient humidity to ensure stable barley moisture content and prevent dehydration during drying. The JUMO variTRON 500 monitors external air temperature and humidity, displaying results on a multifunction panel or visualization program. Drying: Malt is continuously dried until it reaches a stable state suitable for storage. Constant temperature control is critical; it is the only way to ensure complete drying without scorching. Otherwise, enzymes in the malt will be destroyed. The JUMO variTRON 500 controls heating recorders related to temperatures above the rack and adjusts the ratio of fresh air to ambient air to ensure optimal drying performance. Additionally, the JUMO dTRANS p30 can record negative pressure as a supplementary measurement to verify heat exchanger sealing and prevent kiln exhaust gases from contaminating the product. 【Brewing Process】Beer brewing comprises several independent stages: starting with mashing and lautering, followed by boiling and cooling wort, and concluding with fermentation and filtration. Every stage relies on precise monitoring of temperature, pressure, pH, or conductivity. JUMO advanced automation systems have proven their strength through years of practical application. Temperature Control & Regulation: Temperature is one of the most critical process variables in brewing. Precise process control and temperature management ensure that mashing, wort boiling and cooling, fermentation, and storage processes are reliable and repeatable. Accurate temperature measurement and regular sensor calibration optimize costs and prevent excessive heat generation. A mere one-degree temperature difference can result in significant energy savings. Brewery Control: The JUMO variTRON 500 manages most measurement and control tasks within the brewery. Up to 9 program generators ensure independent control over starch conversion, lautering, and wort cooling processes, allowing simultaneous cooling of wort while soaking new raw materials. When operating temperature-time programs for two processes, the system records all specified data, including temperature, pressure, pH, flow rate, steam temperature, and agitation speed. The CODESYS PLC programming system offers comprehensive options for automating processes according to customer standards. Standard equipment includes pH, ORP, ammonia, and standard signal transmitters and controllers, RTD resistance thermometers for the food industry (model 902810), hygienic pressure transmitters (model 402071), temperature transmitter controllers (models 202551/402071), and the JUMO variTRON control panel (model 705070). Wort Cooling: Beer flow rate is controlled by its temperature; warmer beer flows slower through the cooler. To ensure precise control, beer temperature and differential pressure must be carefully monitored using recording instruments. The JUMO LOGOSCREEN 700 performs this task. Due to its versatility, the system issues alerts if the cooling system fails or malfunctions, ensuring efficient plant operation. Comprehensive wort cooling control is achieved in conjunction with the JUMO meroTRON system. Fermentation & Storage: Carbon dioxide generated during fermentation accumulates at the top of the tank. When pressure exceeds a certain range, CO2 is transferred to a recovery unit. The JUMO DELOS SI electronic pressure transmitter, equipped with a display and hygienic process connection, supports this stage. In CCV cylindrical conical fermenters, multiple cooling zones with varying temperatures ensure proper agitation of draft beer during storage. The JUMO diraTRON controls the precise temperature of each cooling zone to guarantee beer quality. Filtration: After yeast removal, beer moves to the filtration stage to eliminate residual yeast cells and other particles causing turbidity, enhancing shelf stability. Filtration methods include layer filtration or screen filtration using diatomaceous earth; however, these are increasingly being replaced by new technologies such as cross-flow membrane filtration. Filter pressure gradually increases during filtration, affecting beer purity to some extent. The JUMO dTRANS p20 DELTA differential pressure transmitter measures pressure increase to precisely determine remaining filter life, maximizing mesh utilization while ensuring beer quality. Bottle Cleaning: Bottle washing rooms use warm caustic soda solutions to clean bottles, followed by rinsing with fresh water at varying temperatures. This process causes continuous dilution of the caustic solution, altering its concentration. The JUMO CTI-750 continuously adjusts the caustic concentration based on conductivity, ensuring reliability and high quality in the glass bottle cleaning process. Slow warming of bottles is particularly important in winter to minimize the risk of glass breakage when contacting caustic soda at 80°C. The compact controller JUMO diraTRON is the ideal choice for monitoring and controlling temperatures in the cleaning room. 【Cleaning-in-Place (CIP)】Hygienic, clean equipment is the foundation of excellent beer brewing. CIP ensures this standard, and JUMO provides reliable systems and solutions. The JUMO AQUIS touch S, a modular multi-channel measuring device, offers a new approach for CIP cleaning. It measures, controls, displays, and records acid and alkali concentration adjustments, fill levels, and flow rates for two tanks—all accomplished with a single device. Typically, it can measure and manage up to four analog sensors and ten parameters simultaneously. Beyond various alarm, limit, and time-controlled switching functions, it allows defining up to four advanced control loops. Regarding resource protection and reduced maintenance costs, both the modular multi-channel measuring device JUMO AQUIS touch S and the reliable electromagnetic conductivity transmitter JUMO CTI-750 offer significant advantages. If operations are managed via a backend PLC program, the JUMO CTI-750 is the suitable choice.
